The mayo is a favorite condiment for many people. They just can’t imagine their meals without it.

Well, I understand you. I’m one of them too.
But, since the commercial mayonnaise is full of unhealthy fat, calories, and preservatives I was looking for healthy homemade mayonnaise alternative that’s delicious and easy to make.
And I found one version that’s without eggs, in fact, it’s vegan.
Unlike the standard mayonnaise that’s out of the question for the people with excess weight or increased level of bad cholesterol, this alternative can be consumed on a daily basis by everyone.
Off course, the excess weight and the cholesterol should be dealt with. But that’s another issue.
This Mayo that I would like to recommend is full with healthy fats and vitamin C.
You can use it as a condiment in your meals, or for your kids healthy sandwiches. It goes everywhere.
1 cup of cashew nuts (soaked)
1/2 cup of water
1/2 a lemon juice
1 teaspoon of honey
1-2 teaspoon of Himalayan salt
1 teaspoon of turmeric
chopped chives (qty depends on your taste)
- Soak the cashews at least 3 hours (preferably overnight, as the mayonnaise gets creamier).
- Drain the cashews and put them in a blender.
Add the water, salt, lemon juice, honey, and turmeric. Mix until you have a creamy texture (about 3-4 minutes).
If necessary, add additional water. (You can add some spices or herbs that are you favorite)
- Place the mayonnaise in another bowl and add the chopped chives. Stir it with a spoon.
- That’s it. The mayonnaise is finished, it can be used immediately with a variety of healthy sandwiches, as a salad dressing or as a sauce with a variety of meals.
It can be stored in the refrigerator for up to 7 days.
